🍳 To make the perfect fritters 🥑
🌽 Mix together 1 egg (save the others for poaching), the grated courgette, drained sweetcorn, paprika, flour, milk and spring onion adding a little seasoning
🌽 Once combined, heat a little oil in a large frying pan on a medium-high heat and ladle in evenly sized spoons of the fritter batter. Cook for around 3 minutes on each side ensuring that they’re evenly browned & the middles are cooked through. Depending on the size of your pan you may want to do these in batches of two. Keep going, adding a little oil each time, until all the mix is used up.
🌽 To poach the perfect egg add a little white wine vinegar to a large pan of gently simmering water. Use the freshest eggs you can as these hold together better. Gently crack the egg into the pan - when it floats to the top, it’s done.
🌽 Garnish a plate with some peppery rocket and stack the fritters in twos - or more if you’re hungry - with some sliced or smashed avo and some chilli jam between each one. Top with the poached egg and if you fancy add in some chorizo, bacon or halloumi. ...
